Mexican Shrimp Aguachile

Ingredients:
- Fresh medium shrimp
- 1/2 Cucumber
- Purple Onion
Ingredients for the aguachile sauce:
- 2 o 3 Chiles serrano peppers
- Cilantro
- 12 lemons
- Garlic Salt
- Black pepper
*NOTA: FIRST OF ALL IT'S VERY IMPORTANT THAT YOU DESINFECT ALL YOUR VEGETABLES AND SPECIALLY THE SHRIMPS.
PROCESO FOR THE AGUACHILE SAUCE:
- In your blender you add the 2 or 3 serrano peppers (If you don't eat spicy food, just add 1 serrano pepper) the cilantro, the juice of the 12 lemons, black pepper and garlic salt.
- You blend everything and it's READY! You have your a very spicy and delicious aguachile sauce so that it gives an amazing flavor to your shrimps.
PROCESS FOR THE AGUACHILE:
- After disinfecting the shrimp, you must peel and clean them (remove all the black thing they have) and cut them lengthwise to make a butterfly cut.
*NOTA: It is somewhat tedious, so if you are not a patient person, I recommend you to buy the shrimp already clean.
- Once you have all your shrimp clean and butterfly cut, put them in the fridge so they are fresh when you put the sauce on them.
- When you have your sauce ready, you add it to the shrimp and let them rest with the sauce for about 10 minutes in the fridge, this will make the shrimp cook with the sauce.
- While you wait, cut your cucumber lengthwise in half, then cut it as finely as possible.
- Cut your onion into julienne strips.
- Once you cut your vegetables and the 10 minutes have passed, you add the cucumber and onion to your shrimp, stir it and it's READY!
Your aguachile is ready to enjoy it with a cold beer or a michelada...
