Mango Mostachon Cake

Ingredients for the base:
- Mango (can be another fruit)
- 4 egg whites
- 1 teaspoon of baking powder
- 1 teaspoon of vanilla
- 1 cup of sugar
- 1 package of Ritz crackers.
- 1 cup of chopped walnuts.
- Butter
Ingredients for the frosting:
- 1/2 cup of powdered sugar
- 1 Philadelphia cheese
PROCESS:
- Preheat the over to 350° F or 176° C
- Beat the egg whites until stiff and add the baking powder and the vanilla.
- Begin to add the sugar without stopping beating and continue until you add all the sugar and everything is blended.
- You put the chopped walnut toasting in a pan over low heat for no more than 10 min, they can burn.
- In a bowl, you start to break the Ritz crackers (try not to minced them a lot) and stir them with the walnut. Add them to the egg mixture and stir with a spoon.
- When the oven is hot enough, grease the mold with butter and add the mixture.
- Let it bake for 17 - 20 min. You can check the mixture with a toothpick and if it comes out clean, your base is ready.
- Once it's ready, let it cool out of the over for about 10 min.
PROCESS FOR THE FROSTING:
- In a bowl, put the Philadelphia cheese and 1/2 cup of powdered sugar and beat until smooth.
- Once it's completely whipped, you add the frosting to the bread and add mango (or any other fruit you want).
