Salmon Pasta with Ricotta Cheese

*NOTE: If you're not a big fan of salmon, you can do the pasta with chicken or tuna.


Ingredients:

- 1/2 cup of Fusilli Pasta (or more)

- 150g of Salmon (it can also be smoked salmon)

- 1 tablespoon of Olive Oilt

- 1 tablespoon of Ricotta Cheese

- Spinach

- Mushrooms

- Pepper

- Salt

- Cilantro powder (optional)

- 1 garlic clove

- Oregano


PROCESS

- First of all, you cook the pasta. In a pot, bring water to boil with a pinch of salt, over high heat for about 6 min. Do not add the pasta until the water reaches its boiling point, once it is boiling, add the pasta and lower the heat to medium and leave the pasta for about 8-10 min.


- While your pasta is cooking, cut the salmon into squares and leave to marinate in a bowl with the olive oil, a pinch of pepper, a pinch of salt, cilantro powder, a pinch of oregano and the garlic clove cut into really small pieces.


- Now, while your salmon is marinating, heat a pan over medium/high heat.


- Once the pan is hot, add the spinach, mushrooms and previously marinated salmon. Cover it up an turn off the heat (you practically are gonna let it steam cook).


- Once your pasta is ready, remove it from the heat and drain the water. You place the pasta to the pan where you have your salmon and vegetables and add the ricotta cheese. Mix it slowly for a few minutes.


DONE! Your pasta is ready for you to enjoy!
