Healthy Mexican Chilaquiles

Ingredients:

- 3 tortillas or toasted tortillas

- Tomato

- Purple Onion

- Cilantro

- Panela Cheese

- 1 o 2 eggs (optional)


PROCESS:

- Cut the tortillas into rectangles and put them in the air fryer for 8-10 min at 370 degrees, try to move them so that they are all evenly toasted, it may even be less time depending on your taste... if you do not have an air fryer you can do it in the pan or buy toasted tortillas.


- You make one or two fried eggs (I usually put 2) and add them on top of your tortilla chips.


- Then add the tomato, onion and diced cilantro.


- And for the final touch you add panela cheese and a sauce of your choice (If your interested in which Panela Cheese I buy, feel free to send me a message)


Super easy, right?


The truth is, it is a very simple and practical recipe, it is one of my favorite breakfasts and they are really delicious!


*NOTE: The sauce I use for my chilaquiles is one that my grandmother makes. It is made with handcrafted tomato sauce, cilantro, serrano pepper, a clove of garlic, salt and a little bit of watter.
