French Toast Sandwich

Ingredients:
- 2 pieces of bread (I use Sara Lee Delightful)
- 1 egg
- Almond Milk (or whichever you use)
- Stevia
- Cinnamon powder
- Vanilla
- Ricotta cheese
Toppings:
*Toppings are optional, you can add whatever you like the most*
- Blueberries
- Peanut butter or Almond butter (I use the Costco ones)
PROCESS:
- First of all you heat the pan over medium/low heat.
- While the pan is heating, in a bowl, add the egg, a splash of milk, a splash of vanilla, stevia, and cinnamon powder. Stir it all up.
- Once the pan is hot, lower the heat and begin to soak the first loaf in the mixture on both sides, then put it in the pan and cook it on both sides. To know if it's ready, just add a little pressure with the spatula and it no liquid comes out, it's ready. Do the same with the second loaf.
- While your second bread is cooking, in a bowl, add a tablespoon of ricotta cheese, a splash of vanilla and stevia, stir it well. Spread it on your first loaf.
- Once your second loaf is ready, you put it on top of the ricotta to close your sandwich. Add the toppings of your preference and cut it in diagonal.
DONE!
